So I recently networked my way (through a local grocery store) into being able to be invited by a team to a local BBQ contest.

I'd like to see if I can get them to include me onthe team. Any hints or tips on how to win my way in?

Do I just help out until they accept me on, or should I try to bring something pre-made to them to try and see if they like it? I think My latest brined chicken is really damn good. Should I bring some and let them try, or would that bad form?

Any hints out there from any BBQ team mates?

I'd just go and give them a hand, check things out and have some fun

. No expectations. When it's all said and done, let them know you would be happy to fill in on the team if they ever find themselves a man short.

I agree with Dave. Just go to give a hand and earn your way in that way

At the very least you could ask them what and how they are doing particular meats, even if not throwing your own meat into the competition you could make a few things and have them smoked for the team to enjoy while competing.
Have they ever heard of fatties? You could blow their minds with something like that and they may hand you their aprons and go home to cry after something so good.

Steer clear of the BBQ recipes and cooking tips.

Bring beer, ice & some cigars.

A bag full of hot wings and/or a fatty or two ain't gonna upset anybody (so long as they have room on the smoker to cook em).

Don't try too hard. Just be yourself and help out whenever possible (especially with the grunt work of loading and unloading the truck).

Most folks treat this stuff as a hobby where they can hang out with friends. Winning is nice, but picking up a couple checks and getting some calls isn't enough to overcome having to spend the weekend with a couple of know-it-all jerks.

Steer clear of bringing something like your brined chicken or any other item that could be misconstrued as a turn in item. If another team were to see you, they might call "foul" and end up with more headaches for your team.

All of there Comp meat would have had to have gone through an inspection process when they started and all of it had to not be pre-rubbed, brined, treated, etc before arriving.

I do like the wings idea which wouldnt be construed as a turn in meat, but with all the teams I know, food is never an issue. I like the bring beer, ice, etc.

If you are just starting with a team that is already established, they have very set times and guidelines for doing stuff. So my .02 is this:

1. Stay out of there way.
2. Offer to clean up after each turn in. Ask them what to do and do it exactly as they say.
3. Clean dirty knives, and replace them exactly where you found them (most teams like a "slicing area" or carving area. Keep the knives and utensils clean.
4. Know the turn in times. 15 minutes before turn in, follow rule #1 to the letter. No talking, just say one time "I am right over here if you need me". Stay "right over there"
5. Once turn in box leaves the area with the runner, Get Cleaning!! Switch out carving boards, clean knives, clean boards, etc. Set back up ASAP, return to #4.

There will be 2 hours of this spanning 4 main categories and 1-2 peoples choice (probably). There will be plenty of time to learn before, get there nice and early, they have been there since Friday afternoon/evening.

Afterwards, help pack up the truck. They are now 2+ days into it, and can use your fresh legs. Most teams are packing early in the week, some need to travel a ways. Your help will come in the most just helping out, not in the cooking itself.

At least, not until you establish yourself as a "team player" and willing to do the dirty job as well as help cook.

Just my .02, but some teams are much more organized and execute a fairly similar game plan comp to comp.

Good luck, and when there is down time, ask plenty of questions!!!

Thanks for the advice all!

Maybe i'll make up a fattie for snack. I like the heads up on not bringing some chicken, I did not know how strict things were.

I will clean like a mofo!
