back in the smoke!!

    Well after smoking 3 or 4 times a week for about 6 weeks I hit a dry spell. Was getting stuff ready for vacation. Well got back from vacation last week and smoked a butt over the weekend and was the best one I've done so far. It was a little over 7lbs and used McCormick pork rub and hickory chunks. Took about 12 hours in the smoker then sat in the cooler for about 2 hours till everything else was ready. I'm finding that the chunks give much more consistant smoke and I'm getting a lot better smoke flavor since I've started using them.

    Did you inject it too?

    How about a finishing sauce?

    Nope no injections, have not done that with any butts yet. Have injected turkeys before when I've deep fried them, AWSOME!! Sweet Baby Rays for the sauce, but I didnt put it on mine. We had some people over and everyone went on about how good the pork was, I felt a little ashamed knowing how easy it was.[​IMG]
