So I did my first pastrami and it was GREAT! Looking at the spices at the store I found a McCormick pepper blend that had black, white and I think green pepper corns and allspice and coriander and the bottle had the hand grinder on the top. I think it was only about 3 bucks and worked fine. I soaked the corned beef for 3 or 4 hours and changed the water 3 times and patted dry with a paper towel. I set the grinder to the coars setting and covered the brisket all the way around and then sprinkled some garlic powder. Smoked at about 250 with cherry till it got to about 160. Let it cool then put it in the fridge till the next day. Then I used an electric roaster and and put some water in the bottom then set the meat on a rack above the water put the lid on and set the temp to 300. It was in the steam for about 6 hours and that was a little too long, it was hard to slice some of it because it was just falling apart. The taste was amazing and it got destroyed in no time. Super tender, moist, smokey, peppery!! It was 4.5 pounds before smoked/steamed and 3 of us ate it all! I've got 6 more in the freezer that will get the same treatment!
