With all the mention of fatty and ABT, has anyone here ever seen an Armadillo egg? Its kinda like a ABT stuffed inside a fatty. I have yet to try one myself. I think I'll try it this weekend. I got this recipe & pic from another forum I am on to share with yall.

Armadillo Eggs

10 to 12 large fresh jalapenos
1 package cream cheese
1 lb. hot sausage
1 c. Bisquick
1/2 c. shredded cheddar cheese
1 T. Cavender’s Seasoning

1/2 c. bread crumbs
1 T. Cavender’s Seasoning

Cut the tops off the jalapenos, scoop out the seeds and then stuff with cream cheese. Mix the sausage, Bisquick, Cavender’s and cheddar cheese. Mix the bread crumbs and the 2nd part of the Cavender’s in a bowl. Take a scoop of the sausage and wrap around the stuffed jalapenos, roll in the bread crumb mixture and place on smoker.

I'm not sure what the bisquik is for. Maybe just to hold it together.
I think I'm gonna omit the bisquik on mine.
 
that's what I was thinking, there's enough fat back in the sausage to keep the whole thing together.

A note for you MSG phobes out there, Cavenders Greek Seasoning contains MSG. They do, however, sell a sodium free version. Just pay attention if this concerns you.
 
Around here in my corner of the world ,the super markets and bars sell armodillo eggs ,which are stuffed jalopenos ( cream cheese stuffing ) then rolled in a breading and deep fried ...they are good , but I prefer the abt's

a good place to eat here sell armadillo eggs. they take a jalapeno stuffed with cream cheese, and roll it in the middle of a boneless skinless chicken breast. stick a toothpick thru it and cook them. as i don't like cream cheese, i have never ate one. i might smoke some like this, but put cheddar in the japs.
 
Maybe skip the bisquik inside the mix. Smoke them as usual, then wrap them dip them in bisquik batter and smoke them some more to cook the bisquik.
 
That sounds good, but I would recommend a portable angioplasty kit to carry around to clear the heart of any clogs......

I am going to have to try smoking the stuffed jalapeno thingys....you guys are killing me with those pictures of them. Sounds freaking awesome.
 
I know this is the SMF, but that recipe begs for about 5 minutes in 360* peanut oil. I vote to do some in the deep fryer, then also do some ABTs for the fry-o -phobes (mostly skinny people anyway

tim, i have never seen, nor heard of, mascarpone until your post. what does it taste like? i googled it, but i still don't know how it tastes.
 
Brennan pretty well nailed it. It's a little on the sweet side too. If you've ecer had canoli, the filling is usually made w/ mascarpone.
