Another Year of Pecans Done

I done with gathering pecans. I dont ever remember wearing shorts to do this. Not sure if they just that early this year or just hotter than usual. Trees have not even lost its leaves yet. Normally would have gloves and scarf on! I use these to make those Habanero Garlic Honey pecans for friends. Now to find room in the freezer. You would think with 3 refrigerators and 1 freezer would not be a problem with finding room. My oldest fridge not cooling good and trying to talk myself into just not replace it but no room for what is in it. I am going to just order one that on sale for $450 at best buy this week.

I buy 10 pounds of shelled pecans every year. Vacuum seal them just like yours. At last count I'm using 5 refrigerator/freezers and 2 standup freezers.

Paper shell pecans? Those are my absolute favorite.

I would love your recipe for the hot glazed pecans. I am slowly tolerating sweet flavors again.
Florida is well above averages for this time of the year. Actually, supposed to be normal high in the morning at 60°. Told my wife she will need a light sweatshirt for her morning shell gathering.

We're Ok in fridge space, but freezer is packed. Found a freezer at Costco that will fit a nook in the apartment

OMG soooooo many pecans! My mother and her sister used to do their walking exercise and carry pecan roller sticks and a bag and she would end up with tons but hasn't had many in recent years. I thought they just weren't producing so well. So I haven't been able to snag me any gallon bags of all the ones use used to collect (a whole freezer's worth). So I'm super jealous of those bags there. Good eatin!
 
That's a lot of pecans!! I bought some the other day to make a keto pumpkin crunch cake, based on what I paid for them you've got a small fortune there!

we don't have pecans around here unless you go to bank first and then to the store.

Those sound great. Nice to stock up on the things you love. I did not get any preserves or pickling done this year at all. Still have a couple bottles left from last year , but almost gone.

These are natives. I have gave up trying to find paper shells. I use to have some great trees right by my house at a fire station but sadly theyy cut them down to put in a gas station. I getting ready to post my updated recipe but not really much change:

There are some paper shell trees I use to use but been 8 years now since they produced. Natives seem to produce every year.

I have no idea what is wrong with store bought pecans, they feel and taste so hollow. Nothing like fresh pecans and yeah a small fortune for sure! :D

Nothing better than Texas soft shell pecans. My grandmother had a soft shell in her back yard but it finally quit producing so she had it cut down
