The family really loves the stuffed pork tenderloins that I make. Made these up for labor day.

Cream cheese and some of my salt free pork rub

Mustard binder with SPOG on one and my pork rib rub on the other ready to hit the 140 Degree PBC with B&B Briquettes, Cherry and Apple Chunks.

Cheese is oozing out, pulled at ~145 IT and let rest.

Great smoke penetration from the cherry and apple wood chunks. plus- very moist!

Man it looks fantastic! Not sure my knife work is up to doing a loin like that but may have to try.
You can just cut it in 1/2, stuff and tie. You can also do your best and pound out the thick spots.

I haven't done one in forever. Dang now I need to. jcam222 jcam222 Don't need the fancy knife work. I have just cut in half almost all the way through and stuff it. Tie it together and go. Think I did feta and spinach. Was a great meal.
Sounds good and you are right on on the knife skills, you can also pound them out with a rolling pin.
