The family really loves the stuffed pork tenderloins that I make. Made these up for labor day.
Butterflied the tenderloins
Onions add such great flavor and moisture
Cream cheese and some of my salt free pork rub
Left one with mushrooms and onions
Right one with green chilis and onions
Some mozzarella and ready to tie up
Mustard binder with SPOG on one and my pork rib rub on the other ready to hit the 140 Degree PBC with B&B Briquettes, Cherry and Apple Chunks.
Cheese is oozing out, pulled at ~145 IT and let rest.
Great smoke penetration from the cherry and apple wood chunks. plus- very moist!
