I've been intrigued about the whole science/art of smoking for years but never actually tried doing it. My son, who also introduced me to this Forum, was given a smoker recently and has shared both his excitement with the art and the products of his efforts with me and I'm hooked. My plan is to start out by seeing what I can accomplish using my Char-Broil TRU-Infrared gas grill, low-and-slow, while following my usual tendancy of completely over-studying the universe of available dedicated smokers before just picking one out and going for it.

I'm a willing listener, and welcome guidance as well as warnings from those who have walked this path before ...
