Another Fatty question

    Hi Guys,
    About to try smoking my first couple of fatties. Do you thaw them before you smoke them? The ones I got today were in the Freezer section. Also, do you use a thermometer or do you just go for 3 hrs?

    You are going to want them thawed cseymour. I am guilty of not probing fatties sometimes, but you probably should. You'll want them to go to 165° internal.

    We'll see how it goes. This is a real trial for me. First fatties and I get to play with the new Maverick Thermometer.

    Hey Cheech,
    Didn't have time for pictures, but the fatties came out great. Wife and kids were pleasantly surprised.

    Looking forward to next smoke, probably a couple of chickens or Boston butt, or maybe both :).

    These forums have been great. Everyone is so helpful and friendly.

    Congrats on your first fatties Chris! Gonna be hard to smoke anything now without a fatty or two to snack on I bet. ;)
