Hi Guys,
About to try smoking my first couple of fatties. Do you thaw them before you smoke them? The ones I got today were in the Freezer section. Also, do you use a thermometer or do you just go for 3 hrs?


You are going to want them thawed cseymour. I am guilty of not probing fatties sometimes, but you probably should. You'll want them to go to 165° internal.

Didn't have time for pictures, but the fatties came out great. Wife and kids were pleasantly surprised.

Looking forward to next smoke, probably a couple of chickens or Boston butt, or maybe both :).
