Alpha-gal syndrome, from a tick bite, is very real. I know three people who have it. Their "meat" portion of the daily diet is restricted to fish and poultry and they become allergic to beef, pork, lamb, etc. The diet gets monotonous - so I spice it up for them with some bulk chicken sausage.

Chicken sausage is made from chicken thighs. Best is bone in, more skin and fat. 7 pounds of bone-in chicken thighs makes about 5 pounds of sausage. Save the bones as it makes an awesome chicken broth.

Two of them came by this evening and we made 25 pounds, and three flavors of, bulk chicken sausage to give them a little variety in their diet.

We made andouille, a brat pre-mix called Sheboygan, and a traditional Italian sausage with fennel.

I added it up, we deboned just about 34 pounds of chicken thighs to make 25 pounds of bulk sausage.
With the 3 of us all helping, it took about 3 hours from start to last item washed and put away.
FWIW - The chicken thighs from Sam's Club were huge compared to the grocery store purchases.

Nice haul of sausage. Makes me thankful when I think about how many ticks I’ve removed from myself over the years. Seems there is an ever growing list of conditions that are permanent from tick bites.
 
Thats mighty nice of you, have been lucky to not catch more than Rocky Mountain Spotted Fever, I am more mindful of ticks these days as they are more prevalent since the deer population started up in the early 70’s, some call them tick totters for a reason

Those little buggers are sure a pain. Don't dare take the little pup down the walking trails behind my house when it is tick season.
Nice work you did , they will much appreciate.

It has been a couple of weeks since we made the chicken sausage. The "newest-unfortunate" alfa gal syndrome person, who's family had to call 911 because they thought he was having a stroke with his first allergic reaction, said the texture and flavor of the chicken thigh sausage was nearly identical to traditional pork sausage.
 
Jane and I both have had Lyme so we are both very careful now,permethrin on the cloths and picaridin on the skin.

I use prescribed fire on my farm annually, burning about a quarter of the property each year. This practice helps control the tick population to some extent.

Interestingly, early explorers like Lewis and Clark never mentioned ticks in their writings. Instead, they described an abundance of wildlife—thousands of turkeys, pheasants, doves, and quail. Historically, central Missouri was predominantly prairie with scattered savannas, where trees were sparse, appearing only every quarter mile or so. Today, however, much of the landscape has transformed into a closed-canopy forest or wide-open ag fields heavily modified with chemical additives (herbicide, pesticide, fertilizers, etc.)

Birds are gone - ticks are here. Possums eat ticks but don't even make a dent.

Nicely done Eric and awesome of you to help them out. That diet would be tough to comply with… again nice job on lending a hand for different flavors.

Here like other places ticks come and go. This past summer one of my dogs (English golden) got bit by one. $4000.00 later she is back to her self. Hoping no lasting effects. Have heard from other people some of the other side effects those bugs can produce. Not pleasant at all.
