Smoked some chicken drums this weekend, and because my girlfriend wanted to go relatively healthy, I decided to remove the skin. I am also a bit low on propane, so didn't know if I would be able to grill them after smoking to crisp the skin.

I had two packs of 20 drums each, and needed some roof in the freezer, so figured I would do them all and bring some in for people at work.

I have so far had six people come up to me and ask for recipes and if I do catering. It is nice to hear such praise once in a while.

Gets me to thinking a BBQ catering job on the weekend might be kind of fun and get me some extra cash. Would of course need some better equipment but still would be cool. Would just need to find a rig big enough to do the job and light enough to trailer behind my Mini Cooper

You know what Dave, you are absolutely right.

My appreciation goes out to Jeff and everybody on this forum. Without all of you, I would not have discovered some of the best recipes and methods that I know today. I am hooked on this site and look forward to reading new things on it every day and learning new things to make this hobby of mine all that much more fun and interesting. When I ask questions, people answer without making me feel like a complete idiot which I find to be a problem on other forums.

To Jeff, I have to tell a quick story. I purchased the rub and bbq sauce recipe and am so glad I did. I have had numerous people ask me for the recipes, but I always tell them that out of my personal appreciation for these recipes and respect for where they came from, they would have to buy them off this site just like I did. Not sure if this has gotten any business sent your way, but I hope it has. I'll tell you too that if I had tasted these recipes without buying them first, I would have payed a lot more for them.

Because of this site I have learned so many wonderful things, and I am sure I will continue to do so and hope to contribute anything I can to all of you as well. On behalf of myself, my family, my friends, my neighbors, and my co-workers, I sincerely thank all of you.

OK, enough blathering on.
 
Your story about your success from SMF is one that most of us can identify with. The information found on this site has propelled me from an average "run-of-the-mill" smoker, to one that people enjoy seeing walk in with a tray full of meat!

The fact that people are enjoying the food you're preparing, enough for them to ask you to make more for them (i.e. small caterin' jobs) is the best feeling one can have from tending to that hot smoker all day. I'm not going to launch into a full-caterin' operation but having people that will give me some pennies for my work is enough for me to hang my smoker tongs on!

That's good stuff! I remember the first time I did whole chickens. Cut them in half and froze them in vac seal bags. I'd take a half into work for lunch and nuke it hot. The smell would waft over the cubicle farm and I cracked up at the gopher heads popping up over the walls, nostrils flaring!!

Yeah, it was great! They could identify that it was chicken, but couldn't figure out what was making the chicken smell so GOOD!
 
I'd like to see that! LOL!

I will also say that lots of folks have complimented my smoked meat products. It's great to get that kind of feedback. Because of that, I too have given serious thought to catering BBQs on weekends.

Praise is an awesome thing that doesn't get said enough in todays life styles. But when it is said, what a wonderful feeling. It is good hear.
