3.5 pound corned beef. Pulled at 200. Probed tender.

Cooled and sliced the next morning. The boys at work devoured it! It came out delicious! It does look a bit dry. But it wasn't at all. I'm really impressed with that little pellet smoker.

Nice looking pastrami! Every now and then I brighten my buddies day and drop him a package of my pastrami. Unless you know a good smoker, you dont get pastrami like Steve H's pic.

I never understood why stuff like corned beef and turkey is LESS expensive around the holidays people are buying it for anyway. Seems like they would drop the prices in the off season when few are looking to buy.

The grocery chain "Giant" here in the Mid-Atlantic always has the best prices on corned beef around St. Pat's. I have 2 flats and 2 points in the freezer. Got the flats this year for $3.50lb and the points for $2lb. I use the points for corned been and cabbage and the flats for pastrami because they are more uniform.

Thank you for the compliment! I never really understood that either. Perhaps with the holidays. They know it'll sell. Versus taking a chance of it going bad during low demand times.
