Sorry about not posting up a cook in a while. Life has been busy!

3.5 pound corned beef. Pulled at 200. Probed tender.

Cooled and sliced the next morning. The boys at work devoured it! It came out delicious! It does look a bit dry. But it wasn't at all. I'm really impressed with that little pellet smoker.

Pardon my ignorance but Pastrami and corned beef seem like two completely different meats to me. I have seen them both mentioned together in many posts here and it's confusing to me.

Is one turned into another somehow?

Thanks Chris! When you take a corned beef. Throw on some coriander and pepper for a rub. Then smoke it. It is then a pastrami.
 
Looks great Steve. We love Pastrami. I agree, some nice Rye bread etc is perfection.
 
Looooookiiiiing good Steve. Corned beef is still way too expensive up here, and they never seem to make it to the yellow tag bin unfortunately.

Even the St. Patties day sales this past year weren't anything to brag about. I'll keep my fingers crossed that they'll be better next year, but won't hold my breath.

We never have any good sales on corned beef .

Thanks! This was just finger food for the troops. They know I do smoking and pickling things. And bug me to bring something in from time to time.

Looks great, if somebody wants to do this make sure you soak it for 24 hours and change the water a few times, they can be bad salty if you don't.
