A little bread experiment

Been making a loaf or 2 of bread about every week for a bit now. Cheaper & better than store bread. Been thinking of ways to mix it up, without going overboard. Decided I'd try a little agave in my mix. Figured I'd share the recipe.
This is super simple and nothing fancy.
675 g bread flour
1½ cups water
2 Tsp salt
2 Tsp yeast
2 Tbsp olive oil
Close to 1/4 cup Agave

Mix dry ingredients then I mixed water and Agave together and added to the flour mix. Knead dough.
I let it rise for 1 hr then give it a small knead.
Then let it rise for another 30 min, then I place in loaf pan and let it rise to just above the pan.
Spray pan with oil
I brush the bread with 1 whisked egg to get a good crust, then sprinkle with sesame seeds
Bake @410 for 25 to 30 min.

Came out really good, with just a nice hint of sweet to the bread. The Mrs. Made a egg salad mix and had some easy egg salad sammiches tonight. I'd say it was a success.

Exactly.

and 1.5C water is 355gm. MUCH easier to weigh and be consistent. SO your dough is at

53% hydration. Kinda low for my tastes (+70%) but whatever you like.
