Here are 2 of my favorite Dutch Oven meals.
Mountain man Breakfast
2 Pounds of breakfast sausage
2 pounds frozen hash brown potatoes
8 eggs, beaten with 1/4 cup of water
2 cups cheese grated
In a 12 inch camp dutch oven over a full bed of hot coals, fry and crumble
sausage. Remove cooked sausage and drain on paper towels. Using the sausage drippings in the pan, brown the potatoes, and spread them out evenly in the bottom of the D.O.Place the coooked sausage over the potatoes. Pour eggs over sausage layer. Sprinkle top with cheese. cook with eight coals under D.O. and 16 coals on top for 20 to 25 minutes, or until eggs are done.
This recipe will fill a few, hungry campers bellys in the morning.
Chicken & rice
1 cup instant rice
4 to 5 boneless chicken breasts
1 package dry lipton onion soup mix
1 can chicken broth
1 can cream of mushroom soup
water
pour rice (not cooked) into 12 inch D.O. place chicken on top of rice. Sprinkle lipton onion soup mix on top of chicken. Dilute chicken broth and cream of mushroom soup with 1 can of water (use the soup can). Pour this mixture over the chicken and bake in camp D.O. at 350° with 14 coals on top and 7 coals on bottom for at least one hour, turning the lid and D.O. a 1/4 turn every 15 minutes to prevent hot spots.
This meal goes well with some biscuits.
