UPDATE- MORE DELICIOUS PICS POSTED FURTHER DOWN :-)

Haven't been able to do a good smoke for a while, so today I let loose.


Started with a rack of spares and some boneless, skinless chicken thighs.


The chicken was brined in assorted spices, salt, brown sugar, fresh herbs and crushed garlic.


Here are the ribs, dusted with a quick rub made up of whatever I had, and soaking in pineapple juice overnight. I stuffed each chicken thigh with a nice hunk of sharp provolone cheese and then wrapped them all in bacon.

Ribs getting caramelized. I smoked the chicken for about an hour, then finished on the grill.

My dog Brady actually sitting still for once. I wonder why? Ususally he's running so fast you can't see him :-)


Ribs are done. Need to be sliced.


Some of these were so big they looked like pork chops !!!


The cheese gave them a great flavor. This was some of the best chicken I have ever cooked.

Nice post. That is some good looking chicken. I see you use the Bone Sucking Sauce. That is one of my favorites. Thanks for sharing
 
I didn't realize how much I missed it unti I was in the middle of the day. Can't wait for next weekend !!!
 
Everything looks good I like the chicken with the bacon.
 
I think I'm gonna do the chicken again. My wife liked it, but my daughter devoured it and wants more. I think I'm going to add mushrooms and some sesame seeds. I would like to tinker with this one a bit and see what else I can come up with based on it.
 
Cooked the last two thighs I had brined, then frozen. These are absolutely delicious and smell amazing.




Too bad they only want non-perishable items. I would blow them away if I showed up with a tray of these :-)

Sauteed some baby bellas in butter, garlic, onion and a couple dashes of Cholula hot sauce.


Poured over the top of the chicken.


Sprinkled with some sesame seeds and made a little mixed greens salad with red onion and some of the provolone.


Low light photo to better pick up the smoke ring. I can't begin to describe how delicious this is. Using thighs gives it such a deeper flavor with the dark meat and all the herbs. Brining keeps the chicken sooooooo moist and tender. And the crisped bacon just puts it over the top. Thanks for looking.
