I am fascinated by wood. Have been smoking chicken in order to learn how to maintain high temperatures using wood. It's coming along well, thanks to this forum. I have been using 1/4 chimney of lump charcoal to get things going with about 4-5 logs. I get up to temp fairly quickly and my Stoker is outstanding at maintaining temps. Cooked about 3 chickens in my Oklahoma Joe that came out pretty well. I'm still learning my smoker. I hope to graduate from newbie to journeyman soon.
