just joined this site a couple days now. I'm a casual smoker living in hawaii but would like to get into it more. I am currently using a brinkman standup smoker which I put over a gas burner. I use a small cast iron frying pan to put my wood chips in. I'm also building a little bigger smoker out of a metal locker like the ones in gym class. I'm also planning to use a gas burner for my smoking in this one. When smoking my meat I usually have to add wood chips every 20-30 mins. over the course of 4 hours. Any suggestions on how to do this without having to check every half hour or so (longer smoke times between chip replenishing?)

Hello and Welcome to our addiction.  A word of warning: There is no 12 step program for this one!  Many good folk here with a load of experience that they are more than willing to share.  If you have specific questions just start a thread and someone with experience will be along soon to offer advice.  All info you can provide us with such as smoker type, location and so on will help us answer any questions you may have.  Spend some time doing some research on the forums, tons of advice and recipes already available there.  We look forward to your contributions.  Have fun.  Good luck.  Keep Smokin!
