After yesterdays rib debacle I decided to try again today with a chicken. We set the temerature to 250 and let the smoker warm up for a while before we put the chicken in. The temp never got about 210 in the smoker. We also measured the temp with an extrenal probe and the temp on it matched the smoker display so I think it's reading right. The weather is fair today, low in the 40's last night with a high of 65 today. We started the smoker at 7 this morning and put the chicken in around 8. 6 hours later it's still not done. We ran the smoker temp up to 275 to see if we could get the temperature up and managed to get it up to 230 and maxed out.
Does anybody know what might be going on? I think the lack of temperature is what ruined the smoke yesterday too. The smoker was purchased from Sams about a month ago and has been used three times, two of which did not turn out well at all.
