trimmed st. louis style with my 13 spice rub on it, going right now in my charcoal ECB. i don't have any prep pics but hopefully if i catch a break between the Giants game and the Yankees game i can get some Q-View pics or atleast the final product up.

it happened...well im pretty sure it happened. i got attacked by the creosote monster. everything was going good, had great tbs for the first 3 hours. next thing u know i go to check the temp and theres huge thick white clouds of smoke. I thought i caught it early enough but once i bit into the ribs, it just didn't taste right. First time it's ever happened to me, and so disapointing.
 
Well, what the heck? Usually that'll happen when too much wood is tossed in, or the wood is green. But out of the <thin> blue? Like you left it fine and came back to find this? Huh.
 
i was using chunks and one of the 3 chunks i had in there was the cuplrit. maybe it didn't catch at first and then all of a sudden it did. really wish i knew what exactly what happened to prevent it.

oh well, atleast the giants won
 
Gee that stinks. I wonder if you can wash them off and recook them a bit? Maybe it's only on the rub? What kind of chunks were you using? I never got creasol so I'm not sure if you can fix it. I just hate to waste food.
