Hey all, sorry i've been awol once again, crazy times. Still unemployed and looking.

Ok since only 4 people responded to the Meat category and it was 50/50 Beef/Pork, i'm going to make an executive decision and say LETS DO PORK. So....if you wanna do ribs like in the past you can or any other pork-related dish. Pork, pork, pork.

Drink competition is going to be the same as normal. Can't wait to see everyone, it's been a little quiet on here so hopefully everyone is still planning to attend.

Anything we have not discussed yet? See you all in about a month

Yes... You can put a tent on my site... We are really close to a nice clean shower house... Will be great weather for tent camping...
 
So were getting close... only a month away ...

Since I have a prime brisket in the freezer... I beleive I'll be doing that on Sat. I'm still good for the Maple Bourbon Ham on Friday ...

Any intrest in sausage making ? I have 20-22 mm sheep casing for breakfast links... And I have (I think) 32-35 sheep and/or hog casings for some fresh sausage...

I'm down for sausage making Keith! My gf's mom and step-dad are coming this year and i'm sure he'd love to get involved in the sausage making.

Looking forward to seeing everyone again and any newcomers. This thread has been a little quiet so i was getting worried haha
 
Hello Everyone. My wife and I are still currently planning on coming. Looking forward to some cooler weather and a fire.
I would love to make some sausages. Keith let us know what we can bring if you need meat or anything.
 
OK... I'm thinking this time we'll do more of a summer/regular sausage type thing insted of snack sticks... I'll have to go through the smokehouse as it took a hit (inside the shed that took a hit) from Hurricane Milton...

Things I can think of that we would need :
  • Seasonings ( I get from OWENSBBQ)
  • Casings ( I have casings for reg. sausage. We would need Summer Sausage casings)
  • Meat (boston butts)
Of coarse I have all the equipment. We would just need Rick BGKYSmoker BGKYSmoker to come as he has all the knowledge ... OH.. And bring some bread with ya ...

Sausage making is fun and both educational as well as entertaining (especially if your snoot has been in the jar too early) for the crowd.
I can bring a couple kgs of ground pork butt from the freezer.

I was planning to make a couple of boules in proxy for Rick. Maybe he doesn't trust me to do his starter justice now that he may make it to the soiree?

Stopped at Cabela's / Bass Pro Shop in Fort Myers today.
I got a box of fibrous summer sausage casings. They are 20" long by 2.5" diameter.
There are 20 casings in the box so that should be enough for the party. Box states it will make 50# of sausage
I've never used these casings or made summer sausage. I hope they are acceptable.

I'm bringing 3-1kg packages of ground pork butt. I coarse ground and froze them last week so pretty much ready to go.
 
OK then... John picked up some casings... I just ordered some snack stick casings as Doug would like some sticks... I have some seasonings for sticks... John wants to do a summer sausage from two guys and a cooler... He says he has seasonings to cover that...
Let us get a little plan together to figure out what and how much meat...
 
I would love some snack stick as well. Along with any sausages. I can pick up butts no problem, and have them cut up and cooler prior to the gathering. Just let me know how much we need.

We're vacationing at Fort Myers Beach this week. Yes snowbirds can also vacation. When we get back to Orlando I'll get to the Costco Business Center. I remember they had packages of tri tip but in bigger sized packages than I wanted to purchase. If anyone is interested in tri tip let me know. I can separate into portions. I think it was around $4 per pound
