Cajun Jerky using Cherry to smoke

Dude! That looks amazing!! Did you use beef? If so, what cut of beef did you use? I'm totally trying this!! Now that I followed your link to the recipe I see it recommends beef London Broil or Top Round. Check and Check!!

17lb Brined turkey for thanksgiving too big???

I brined overnight with the recipe from Jeff's "Buttery Smoked Turkey". Rosemary, thyme, black pepper, red pepper and kosher salt. About 11hrs. Got it out and dried around 11am. I spatchcocked it and realized I need better shears! Made up the butter and rub mix. Put it under and on the...

17lb Brined turkey for thanksgiving too big???

Thanks for the quick reply. I figured that the brining would help with the thawing process. I was also concerned about how long the smoke time would be just doing a whole bird. I started digging around and read about doing larger birds (over 12-14 pounds) by first brining, and then...

17lb Brined turkey for thanksgiving too big???

So I wanted to try my first brined turkey smoke. Wife picked one up today and I started looking over a couple recipes on Jeff's main site. Looks like 17lbs is a bit too big. If I'm going to do the 17 pounder and brine it I will need to begin the fridge thaw tomorrow. I'm using a Yoder 640...

Butcher Paper, 13# packer brisket and cook time.

Wow. Maybe Ill start at a lower temp for the overnight. Maybe 180-195. Then kick it up tomorrow. I had no luck finding butcher paper so this will be a no wrap smoke. Been a while since I've done a brisket. Have to check my notes. As I recall the last big one I did got done a lot sooner...

Butcher Paper, 13# packer brisket and cook time.

Got a pretty decent full packer brisket from Costco. 18 lbs. It looked like there would be a few pounds of fat to trim but I figured it would still be a better cost per pound vs $7/pound at our local butcher. It's a high end place with some great meat but $7/lb was a bit high even in suburban...

    Custom Kitchenaid Grinder Plates.

Another resurrection of this thread.  Sorry for the necro-post.  Hope this info helps. Looking for grinder plate specs for my Kitchenaid and Google sent me back here where I discovered this thread.  Went to the kitchen aid site and perused the comments/reviews section.  Someone asked about...

    Newbie from the ATL

A damn Yankee because once I got here, there's no way I'm leaving. Got a Yoder YS640. So far have done a great Boston Butt, two separate beer can chicken smokes (one with 6 chickens!) and one 13lb brisket. Jeff, Got your book and your recipes. They are just superb. Thanks

SW Atlanta guy.  Currently on smoke #2. Yoder YS640. Lurked here for a month once I found it and knew I was about to pick up the Yoder.  Got so much good info I purchased Jeff's recipes and his book. Great job man!  I'm totally hooked. I am just amazed by all the awesome cooks here!  Always...

    Indicated smoker temperature diferences

I've been in and out all day.  I see what you mean about just trusting the Maverick.  The smoker seems to vary +/- 10-20deg at times trying to hit that target.  Watch the Maverick, split the difference and live with it. Thanks for the reply.

    Indicated smoker temperature diferences

Greetings all.  Pretty new.  Doing my second boston butt. I am using a Yoder YS640.  I did my first butt before my maverick ET-732 came in.  Set the Yoder at 235 and went to work.  Ran out of time so didn't get the perfect pulled pork but sliced and chopped it was still great. This morning at...
