    Smoked some pork steaks (had a boston butt cut to 3\4" steaks). Put in a brine for 4 hours, applied my bbq rub then smoked at 250.     My first ham

    Came out so good. Started with a cheap precooked ham. Coated with a combination of orange juice, apple juice, brown sugar and honey. Then added the rub: raw sugar, brown sugar, but meg, ginger and cinnamon. Used as apple wood at 275 for 3 hours. Spent $29 for a ham that taste like those $70 hams.
