Haven't posted in awhile. Just wanted to share my best Boston Butts to date. Took about 12 hours, but came out the best.
Didn't use any foil for the stall. Also, first time smoking with pecan chunks.

This is the N.C. Chopped. Eastern Carolina style vinegar sauce.
Added baffle and lightweight tuning plates! Still need to reorder thicker Nomex gasket.
Both sides within five degrees.
ABTs almost ready
ABTs all finished! Temperature stayed within 9 degrees entire cook. Windy day may have added to fluctuations. Satisfied with mods!
Going to do some N.C. Chopped BBQ for the Super Bowl. Cooking close to an Eight lb roast tomorrow.

New to the forums and new to modding. Still have smoke leak after 1/8" Nomex gasket application. Is it best to remove gasket and apply thicker one, or can thicker one be applied right to the inside of existing gaskets? I have toggles but lid design won't allow side or front toggles.
