Ok so i have not been on here in a while. But just to see what others have experienced. I have been smoking butts for a while now and always get a nasty stall and take 10 - 14 hours to smoke. Thing is ive had friends tell me that they can get a butt done in 8 - 10 hours.

I have a MES 30 and use it as often as possible but I have a tub of wood chips I've had for awhile now. Used them last week and my grub had a faint after taste that was kinda stale.. is it possible for wood chips to leave that taste?

Ok so I'm looking for new ideas for pork and beef rubs. I make my own rubs every time I smoke something. But I'm getting kind of the same flavors even when I tweak things. Now I don't want anyone's personal recipes. But just ideas for some good tweaks.

Got a real busy weekend so I smoked my pork butt for Monday today.

Ok I have attempted baby backs multiple times with the same results of to dry.. I have done a few different smoke methods with them.
Smoking 3-2-1 just like my spare was failure so I've tried no foil. Taste good just dry I've tried 2-2-1 comes out dry.

Put a beautiful 9 lbs butt in the smoker about two hours ago fat side down cranked the heat to about 250. Just turned down to 225 for another two hours then time to flip it and put the meat probe and smoke for another 5-6 hours. Here's a pic of the butt before going in. Looking pretty..
After receiving my mav 733 and testing the Temps of my MES 30. I found that when set for Temps over 225 the factory therm is off by about 25.. when set for 210 it's spot on. But between 210 and 225 it's kind of a dead zone.
Glad I bought this product.
