I was happy. As far as what I'll do the next time...do more ribs. Try to seal the braising pan up a bit better and use a little more liquid. They were very tasty and cooked perfect.

The maple syrup was fine. It was cold out and I had a hard time regulating my temps. I burnt them a little. Not my best effort. Nobody complained, except me.
I was out of honey, maple syrup will be a suitable replacement.
I'll unwrap these in an hour and a half. Sauce them up and give them another hour naked again
I haven't posted in a long time, but it has been winter here! I'm going to fire up my Trailmaster with some lump and hickory. Bit of a breeze about 27* out.
