Nasty smell coming out of the back of my mes 30

Yes, the entire back is riveted around the edge, and then there is a small hatch towards the bottom of the back that has 6 screws holding it in. I'm guessing that is where the heating element is replaced. I'm only cooking at 225, but I have had the filling port open pretty far to get a lot of...

Nasty smell coming out of the back of my mes 30

My first few smokes in the gen 1 (control panel on the back of the top) mes 30 went fine, but today I notice a foul smell coming out of the back of the unit. It's somewhat like a melting plastic. Inside of the unit still smells only of wood smoke, so I I'm guessing some part of the smoker itself...

Can I do chicken in 10 hours?

Thanks for the feedback, guys. My current grill-only approach takes 1:15 to cook. I get home around 4:30, get it on the grill by 4:45, and take it off about 6pm for dinner. It sounds like my best bet is to try a high temp cook and see if I can get some smoke flavor into it in just 1.5-2 hours...

Can I do chicken in 10 hours?

Here is my predicament - my wife is home during the day with the kids, but is not interested in being involved with the smoking process. Do you think there is any way I could start smoking chicken at 7am right before I leave the house, and finish it at 5pm when I return home? I would prefer to...

    First smoke is underway

Welcome to you as well. I'll definitely be trying a brisket at some point, but I think I'll probably do chicken next. I typically cut up a whole chicken into pieces and grill them once a week for the family. So far I like the pellet approach, as I want to get as close as I can to an unattended...

    First smoke is underway

Thanks for all of your step-by-steps, I've actually been reading through a bunch of your posts throughout the week. I found the ANMPS info very helpful, and used your pulled pork post as a template for my temps and times. It's great to have a helpful group of smokers to learn from!

First smoke - pork shoulder qview

Hi all, I am currently quite full of some delicious pulled pork; the culmination of my first attempt at smoking. The hardware is a new MES 30 (gen 1) and AMNPS. Software was a 16 lb pack of boneless pork shoulder from costco, which sat one day with a rub I threw together. I had a variety of...

    First smoke is underway

Howdy, I'm Adrian, from the Seattle area. I have had mind blowingly delicious smoked foods at my uncles over the years (brisket, pulled pork, ribs, trout), but have never smoked anything myself. Last week I made some ribs to have a few friends over for the Seahawks game. This entailed baking...
