Newbie - been reading up on water vs no water ? Is it easier using something as a heat sink to dial in the heat? Especially when it gets cooler? Flower pot plate, alumni pan, lava rock or a simple interlocking patio paver? Which seems to be better for a newbie? Don't mind adjusting the vents...

    First beer butt chicken

Didn't turn out too bad. Was quite windy and 16c/60f. Had a wind break set up for the ecb. Couldn't get it pas 240. My guess is too stuffed with charcoal ? Anyway here are some pics

    First pulled pork

Just a little port butt - 2lbs , smoking away on my modded ECB. So far 3 hrs and all is good. Seems my smoker likes to cruise at 270. Just hitting the stall and since I have a lot of time will wait it thru. Pics to follow!

    Newb from Calgary

Hi All, Just completed the mods on a master forge (ECB). Have already smoked some thighs and ribs when mods were in progress and will going for pulled port Saturday. Plan on using lump coal and the minion method. Any other tips?

    Newbie in Calgary

Picked up a master forge charcoal vertical smoker. Did the ECB mods out of the box and a quick fire for a couple of chicken thighs! Need to go back and redo some new dampers - aluminum used a little too thin!
