Question: How much do you bend the jerky when checking if it's done?

DaveOmak: I presented all of the scientific evidence in the other thread (http://www.smokingmeatforums.com/t/163385/jerky-coming-out-too-wet-pre-dehydration) - I'm not here to ram anything down your throat, if you want to ignore the actual science being presented/explained to you by an actual...

Jerky coming out too wet (pre-dehydration)

I don't understand, nowhere did I say that Curing didn't work. Obviously  it works. I very openly admitted this. I simply said that it's not for me. I actually have a whole thing of Cure that I ended up with that I purchased beforehand. Before actually beginning though, to clear the air, I...

    Cooked & Dehydrated Beef Jerky?

JP61, are you asking about food safety? Or are you asking about a texture comparison between Pre-Cooked and not Pre-Cooked (i.e. straight to the dehydrator) Jerky? Because your question looked like it was: "How does the texture compare to only using a dehydrator?" I suppose this may need...

    Cooked & Dehydrated Beef Jerky?

Are you using ground meat, or steaks? This would seem to affect the end texture that people would report to you, and thus in-turn the appropriate answer for you (wouldn't make any sense for somebody to answer it if they use a whole different "type" of meat than what you'd be using yourself anyways).

Question: How much do you bend the jerky when checking if it's done?

Awesome! Thanks for the replies everybody. So, there is no known way to actually test whether ground meat jerky is done? That seems strange to me, I would think there would be some sort of test that could be performed. If I cut a piece and then wait 10 minutes before trying it, wouldn't that be...

Jerky coming out too wet (pre-dehydration)

Mostly dry ingredients? Huh?? Why? I don't mean this as an offense but that just sounds like a cop out, it doesn't even address the root cause  of the issue - why some recipes are fine whilst others are not. Besides, switching to ground turkey would completely  eliminate such savory, delicious...

Question: How much do you bend the jerky when checking if it's done?

Okay, this is another question that I've had that has yet to be resolved since starting on making jerky a couple-few weeks ago. This one should be the easiest to answer. Before I begin, I've learned very  frustratingly that most of the information out there on jerky making is FAR  from...

Jerky coming out too wet (pre-dehydration)

Okay so I just started making jerky a couple-few weeks ago. So far I've come across a few issues. Before I begin, I've learned very frustratingly that most of the information out there on jerky making is FAR  from scientific. I've never seen so much "ehh, about as much as feels right" or other...
