    Hey big, I started with the flat lid and put the grate at 6 or 7 inches below the top, when I located a webber lid I added another grate at the top, I also have an awesome reverse flow offset but honestly use the drum the majority of the time, love that thing, just too easy to use

    Im with Willie, the butter knife and paper towel is the best way to get the membrane off, I have cooked it with and without, for me it is not that big of a deal on or off, mostly I take it off out of habit, I also cook with wood the whole time and do not wrap most of the time, always come out...

    A question on fitting of Weber lids.

    I did mine similar to mule, found some 2 in flat stock at HD and just bolted mine around top exposing about and inch above, sealed around top with high temp gasket caulk and the lid fits nice, good luck and keep us posted

    Looks good, nothing wrong with starting small on the first brisket, now that you have your first one under your belt get you a packer for the next one, nothing like a little chopped point to go with the sliced flat, beans look good too
