    Question about smoking an already-smoked ham.

    I am smoking an already-smoked ham for Thanksgiving. My question is should I use awater pan under the ham? There really is not room for one in my pellet smoker unlessI put the ham on the upper shelf. What does everyone think? Wil lit dry out without a water pan for 3 hours at 220 degrees??

    smoking pork loin

    I will be smoking a 6.5 pound pork loin in a gas smoker withcherry wood chips. Any suggestions how long it should take to reach 145 in a 225 degrees smoker? I am some guests coming over and don't want to be late with dinner.

    Having trouble with temps

    I just bought a Landmann 3495 double drawer gas smoker. I am having a lot of issues holding temps in my target range. Today, it is 45 outside and I am trying to hold 225 to 260. The slighest change in the gas control shoots it up over 280 and the slighest turn down drops to 200. Any ideas how to...
