I am kinda freaking out about smoking 2 birds and 2 half hams for thanksgiving dinner... I have a MES 40 and my birds average 13-15 lbs, hams are 6-8 lbs... Thought about doing a low and slow on the turkeys around 220-225 to an IT of 165.... Hams I will put on for about 5 hours?? (I assume)...
Thanks for the info.... Something that occurred to me on the eclectical issues, is it more of the heat getting to the components or "drippings" corroding them??.... Curious because I was wondering if there was someway to wrap them in electrical tape to prevent corrosion or failure to them...
