So it is possible or is my thermometer off

11 lb packer brisket cooked to 195 in only 7 hours. Smoker fluctuated between 235 and 275 because of inclimate weather. Mostly it was in the 245 to 255 range. I was planning 12 hours of cooking time. Is it possible that it cooked in such a short time?

Why all of a sudden wont gosm gasser get above 203

I have smoked 4 times with it and never had an issue with it heating up. I ran out of fuel and bought a new tank. The thing won't get above 203. It is a little windy in Utah today but nothing this thing shouldn't be ale to handle. Do you think it is the new tank that is causing the issue?

Isn't there an easier solution for the needle valve mod?

I have a gosm, just got it Monday. I want to do the needle valve mod but I'm not handy enough to do it myself. Does anyplace sell a ready made kit? One where I can just connect it to the smoker that already has the needle valve. Thanks for any advice

    Introducing myself

Hi all, I've been lurking for a little while. Mostly reading reviews and mods on smokers. I currently have a charbroiled offset that I don't use very often because of the babysitting aspect. I am going to buy a vertical gasser soon. I have appreciated the free flow of information here. Thank...
