A friend of mine is heading across the pond to New York this week and has been recommended to visit Virgil's BBQ. They have already reserved a table. Has anyone had experience of eating there or are there better BBQ restaurants near Times Square that should not to be missed?
Friday 8 pm at home. I am sitting watching TV waiting for Joyce to fetch my slippers and pour me a large Woodford Reserve, whilst she finishes cooking my dinner **. A knock on the door... "Hi Wade, can you smoke a couple of Trout for me that I caught today?". "Sure" I said, "bring them in"...
Having has some of the best spicy Shrimp and Grits that I have eaten in BB Kings last year I am looking to get a good recipe for it. It needs to use yellow corn grits - as that is all we can get here in the UK - and must have a good warming rounded flavour. I need to get 2 versions ready for 2...
An interesting turn of events. I don't think that it should affect the food safety policy here though !

Wow! - it it really next weekend. Where has the last year gone!!!
With less than a week to go now until we bring the sweet smell of smoking wood to Lincoln we just need to confirm some of the arrangements with members who are coming. A number of you have mentioned that you intend to come along...
A 22" Weber Kettle at $68 - that is £53.
Compared with Wow BBQ the UK
OK, there will be some tax added to the $68 but that will do little to narrow the gap.
A week still to go on our Mississippi road trip and I am sorry that I have not been online much over the past couple of weeks but...
I took delivery of a new Uuni-3 Pizza oven last week and I tried it over the weekend.
The unit was easy to assemble and it took about 10 minutes
Assembly
After assembly we tested it with both shop bought pizzas and also home made - using the recipe in the Uuni instruction book.
The shop...
When I was made aware of the Callow smoker I must confess to being a little sceptical. It is being sold for ~£85 and in the pictures it looked quite small. It is being marketed as:
I ordered it and 2 days later it was delivered...
What was in the box?
The smoker was well packed and came in...
For those who are looking to try smoking inexpensively there is now a new bullet smoker from Callow that could be just for you. At only £85 it looks to be good value for money and it is being advertised as:
It is well worth taking a look.
Having previous had great road trip vacations in the USA (driving Route 66, exploring Texas and also driving right around the Grand Canyon) we have this year settled on driving part of the Great River Road in May/June. We plan to start from Chicago, take a short tour to Knob Creek in Kentucky...
If you wanted to try smoking your own salmon then now is the perfect time. ASDA currently have whole fresh salmon at only £5 per kilo - that is very cheap. I bought two today and they are very fresh.
If you want some advice on curing and smoking them then just let me know
You need to be very careful when buying curing products to read the labels before using. I just purchased some German Salami Seasoning from Sausagemaking.org thinking that I was just buying a spice mix (as you would at Weschenfelders). There was nothing on the Web site that indicated that it was...
Brining chickens before you smoke them is supposed to give them better texture and to leave them more moist after cooking. Several times I have tried bring chickens before smoking and on each occasion I have either not noticed any difference in the end result or they have come out too salty...
For the past week I have had 4 "Polish" builders doing some work on my new kitchen conversion. Conversation is not what you would call fluent due to the language barrier but we understand each other enough to communicate. Even though I have asked the same question several times in different ways...
The last couple of weeks have been a nightmare as our accounting server at work got trashed by the Zepto virus. It has taken us over 2 weeks to recover it and I have not had much time to get on here. Sorry if anyone has specifically asked for help and I have not responded. I hope to get a chance...
And what did Chrissie want? Yes a BBQ . Most of her friends were meat eaters but a couple were vegetarian. That wasn't a problem though.
On the smoker we cooked Brisket, pulled pork, ribs, Danny's recipe sausages, Cajun Halloumi, roasted peppers and whole roast aubergine. Not many photos I am...
