Thanks for all the info.i will use the bone tug test and yes it is my first no foil smoke. Do you sauce more frequent when using no foil? I have Ben hitting it with apple juice every harbor so. As far as the chops I figured about 1.5 hr at 220???? Never done em but gonna try.
Hey all.. I am smoking some baby backs, today and wanted to try the no foil method. The 221 works great but I would like to see a little more tug and texture... My question is should I do meat side up whole time? Should I rotate throughout?? And also gonna do sum chops and Cornish hens....love...

Hey quick question....I been reading a lot on here and a lot of folks say if u want a good bark don't foil ..... I have mine in a Tim pan following Jeff's recipe... If I want the bark should I take it out??
