    Ridiculous plateau on my brisket

I started a 12# brisket (had to cut it in half to fit it - the flat on one rack and the point on another) last night at 9:00 in my vertical propane smoker. By this morning, it had reached 142 IT in a 225 smoke. Here I sit at 4:00 this afternoon, and it's at 156 IT. I wrapped it when it hit 160...

Turkey and Pork Loin combo smoke help!

I've got to smoke a turkey for Sunday afternoon. Just started brining it, and I had good luck with the last one I did (thanks to the forum!). My mother just sprung on me that she wanted me to smoke pork loin, too. I've never smoked a loin, but I said sure anyway. My question, how long should I...

    Brisket question

I've got a brisket on the smoker right now that looks like it's going to be done a few hours before I planned. How long can I leave it in the cooler without having any issues? Thanks!

First brisket and fatties, and trusty ol' ribs for tomorrow

I'm starting my first brisket tonight around midnight.  Rubbed it down with mustard and some Stubbs beef rub a few hours ago.  Didn't have enough time to research and/or buy any other rubs, so I hope it turns out well.  I also rolled up a couple of fatties.  Never tried them before, but I've got...

Need an idea for what to smoke with ribs

I plan on cooking some baby backs this weekend, but I think my wife wants something else. I thought about a butt, but I'm not sure I'm ready for that. I only started using a smoker a couple of weeks ago. What do you suggest? Chicken breasts maybe? Thanks for the input!

    My first 2-2-1 attempt

Just got a Masterbuilt Pro Dual Fuel propane smoker. Trying my first 2-2-1 today with some baby backs. Had a little trouble with flare ups so far, so I'll probably try foiling the pan with the wood chunks next time. Using apple wood, a store bought rub, Jim Beam sprayed during foiling. I'll put...

    Hello from Auburn, Alabama.

Just got a Masterbuilt Pro Dual Fuel Smoker. Seasoned it today with seemingly no temp control problems using wood chunks. Have to wait until next weekend before I'll be free to cook something. Any tips are appreciated!
