That's what I like about oak. It has a strong flavor but it has never seemed like overkill. Pecan is probably one of my other favorites but is a touch smoother. Living in the South, it's what people burn in their fireplaces and I love that smell. Never tried maple but I bet that's a good hardwood.
I used oak chips this past weekend on baby backs on my MES30 and I was REALLY happy with it. It's got this complex flavor to it, it's a good smoke, not subtle, you KNOW it's been smoked, but not overbearing or harsh like mesquite can be.
I had used apple wood chips on a rack of baby backs and...
And I cooked them!
At my relatives house, I was asked to bring my smoker.
With an MES 30 that is still new to me, I did 3 racks of baby backs.
Rubbed liberally with mustard and Jeff's rub, smoked them for over 4 hours at 250. No foiling or any of that. I've been impressed with the MES, in that...
Got mine for Christmas. Actually unpacked it Christmas eve, did an initial run with chicken wings, and they came out great. Injected the wings with buffalo sauce, crisped the skin on the gas grill, most excellent.
Then did a brisket for Christmas day. Let it run all night. The brisket was as...
Absolutely, the pineapple is to die for. They sprinkle it with cinnamon, then grill it till it's good and sweet.
I've also taken a chance and eaten some chicken hearts. Not bad, actually tastes pretty good but they're a bit chewy.
Here in South Louisiana we have a small chain of stores called Rouse's. They sell a pack of large mushrooms that are stuffed with green onion or Cajun sausage. Great on the grill, even better on the smoker! I will try to supplement this with some pics, as I don't have any right now. Great...

This is the one recipe that I've found that differs fundamentally from the other "copycat" type recipes I've found on the net. It doesn't contain teriyaki sauce or pineapple juice, and it uses real chopped and sauteed onions instead of...
Just pulled the trigger on a MES 30. No window, with electronic temp control and all.
Should arrive in a week.
Cut my teeth on a electric bullet smoker, then a GOSM gas unit.
Looking forward to it.
I'd like to try the American interpretation.
They call the style of serving where they bring it to your table "rodizio." I've eaten at a pizza restaurant here where they bring pizza to your table. As was stated, sometimes you have to chase them away from the table! You can seriously eat too...
Hey guys, as I posted in my intro, I'm working in Brazil for a few weeks.
They have a certain kind of BBQ called churrasco. They put cuts of meat on skewers, then cook it rotisserie style. Then they bring it to your table and slice a piece off for you. No seasoning except for rock salt...
Actually I'm working in Brazil for the next couple weeks but Louisiana is my home. South Louisiana. Yes, I'm Cajun.
Been smoking ever since I found an old electric bullet smoker at my mom's house. Did ribs, turkey, etc., really good stuff is our fresh green onion and Cajun sausage.
Then got a...
