Had a 3.25 lb point cut CB in the fridge for a few weeks and figured it was time to smoke it. Fired up the WSM and after a good soak to lower the salt content I rubbed it with black pepper and sprinkled on the spice packet that came in the package....figured that would spice it up in a pastrami...
Just a quick Friday night supper. Wings two ways. Marinated 4 wings in a combo of Mr Yoshidas teriyaki with maple syrup to sweeten it and 4 in franks red hot and dusted with A-1 rub. Cooked them hot n fast on the smoky joe. They were very nice.

Thawed out a half of a top round roast I had frozen and threw it on the WSM for dinner tonight. Full load of lump , no water in the pan. Smoker rocked at 300 the whole time. The roast took about 2 hrs to hit an IT OF 130.... Nice mid rare.
