removed the fat cap and most of the fat i could, then seasoned with some salt, pepper, paprika, garlic and onion powder and some brown sugar applied after the rub.
cooked for 3hrs @ 225-250... until she read 140ish on the i.t...
...heheh...that title almost sounds dirty!
anyway..i did my first tenderloins today on the smoker.
i used some toothpicks to make the small end kinda tuck into the big end to help keep it moist. i didn't have any bacon, so i was a bit worried about it over drying.
slathered w/ olive oil...

fired up ol' sam adams yesterday for my first run on smokin some chicken...
turned out really well.
3.5 hrs at ~250-275; then rest for .5hr in some foil. started at 1pm...just used a lot of tony c's spicy cajun rub and some hickory chunks on top of some lump coal that was good and hot...
well, i smoked my first ribs yesterday. i just want to say thank you to everyone that's ever taken the time to write about their problems and successes here on smf. i would call my first attempt a success! ...hey, no one got sick! lol
