    Great looking Fatty! jeffrsports, a 5 lb fatty would be ginormous, not to say that's a bad thing, but you would have a hard time making a bacon weave large enough. Most fatty's are made with a single package of bacon and a 1lb chub of sausage (or ground of your choice).

    Hey kerstingm, great question, however all of the meats will be cooked together well into the safety zone for quite a while, so cross-contamination is not a concern.

    You can mix it, however by separating it you get better smoke penetration to the individual pieces of meat. I have found that by using the racks you definitely get better smoke than what's down in the pan. Good luck and let us know how it turns out.

    HA, no, no beans in this one. I actually make and sell a chili mix packet based on this recipe using just ground meats, makes it much more affordable to make, and we make it often, in that one I do occasionally use beans, but not in this original recipe.

    Thanks bobank03, no oven, I let the smoker heat up to about 400 to crisp up the bacon, it was pretty much spot on with the bacon texture.
