    Jerky Question

I bought the LEM BBQ Jerky mix and plan to try making smoked ground pork jerky w/ a LEM Jerky Cannon. Do I need a certain fat content for consistency or flavor? Any smoking recommendations regarding time/temp, etc? Thanks, Gary

    Snack Stix-casing vs. no casing

Hi All: I want to try my hand at snack stix. Do you need to use a casing if you extrude the ground meat from a jerky gun onto a grate? Thanks! Gary

    !st attempt at makin bacon

Well after 2 weeks in the curing brine and 2 days in front of a fan, my pork bellies are ready to be smoked. I'm cold smoking w/ cob/pecan pellets in my Amaze-N-Smoker trays for 48 hrs. The burner in the pic is off for cold smoking and bacon is on the top shelf. So far so good. Gary

Done at last! The money pit smokehouse is finished!

Hi All: Well, we had a few cost over-runs, but she's finally finished. I've included some pics as well as one of my trial smoking of chicken breasts wrapped in bacon. Thanks again for the input! Gary I welcome your comments and questions. It was a fun project, but I'm glad to be smoking...

    Update on smokehouse build

Hi Everyone: I spent the past week getting the metal siding on my smokehouse and thought I'd send a couple pics. The front is set to the side awaiting the cutting of doors. The stainless liner material is here and I should get plans to the fabricator this week.

    Smokehouse build concerns

Hey guys, I'm having concerns on my project. I am placing 2-3" x 7" adjustable vents at the front toward the base and will have a 4" diameter stack at the top. Given that this unit is insulated, 3' x 3' x 6'-6" (see recent post w/ pics) and lined with stainless steel, do you think I will have...

    Thanks Guys

scored a pretty good deal on stainless steel sheets and will line the smokehouse with it. I'm having a 4' drip pan tig welded out of this to keep the mess under control. A friend with a fab shop is bending the metal to custom fit.

    A work in progress

Hi Everyone: I am in the process of building a somewhat specialized smoker, which may or may not work out as planned. It's my first attempt. Ultimately, it will be about the size of a phone booth, insulated, fire-proofed (sorta), covered on the outside with corrugated steel, lined on the inside...

Smoke House design-still on the drawing board

Hi All: I am still planning to start my smokehouse (SH) build based on Pops 6927's model. Previously, I had made an entry asking about opinions on lining a smoke house with cement board and thank you all for your responses. I was looking for a design that allowed me to...

    Smokehouse that can hot smoke/cook

Thanks for all the input on my upcoming smokehouse build! I think I may have the solution. I had a discussion w/ my machinist buddy last night during "Happy Hour" around the ole wood stove. I didn't realize aluminum and stainless steel both come in 4x8 or 5x10ft sheets. Aluminum melts at 1800F...

    Smokehouse Construction

I really like some of the plywood smokehouse designs I've seen. What if a guy lined his smokehouse with Hardy Board (cement board) to allow for simultaneous cooking/hot-smoking? Is this material sufficiently inert to cook next to? I realize it will be heavy but I plan to install lifting eyes on...
