Problems getting smoke on the Masterbuilt XL

I got a Masterbuilt XL for Christmas and got the 8inch cast iron pan that everyone says to get for wood chips.  I have used this several times now and have barely seen smoke.  I have smelled it and I have seen wisps off the wood but there has not been any leaving the smoker.  I have 3 good...

    My Christmas! Q-View!

I got a new Masterbuilt Propane XL for Christmas.  It is nice and seasoned and today I am breaking it in.   Lunch Johnsonville Brats (First time smoking Brats) already have the beer and onions going for the baste (well and to eat the onions with the brats).   Dinner a 2.5lb Sirloin Tip (First...

Does anyone know if the Masterbuilt Propane 40in is the same as the Masterbuilt XL Propane

I am hoping to get a smoker soon and I am looking at the Masterbuilt Propane.  On Amazon they have the 40in and at BassProShop.com they have the XL.  Between shipping and tax they would cost the same but I could get the one from Amazon much faster.  Does anyone know if these two are the same or...

    Turkey with crispy skin

To me the best part of the turkey is the skin.  Nice crispy skin.  But this year I want to smoke a turkey.  I have heard that keeping the temperture at 325 helps.  I also heard that baking powder works well.  Have any of you tried the Baking Powder?  I have it in a brine and plan on doing a rub...

What do you all do with the trimmings when turning spareribs into Kansas City Ribs

I'm getting ready to smoke some spareribs tomorrow and want to trim them to be Kansas City cuts. I hate the idea of throwing all that good meat away. What do you all do with them? Thanks.

How do you smoke Buffalo wings?

I am doing pulled pork tomorrow and as a treat for lunch I was thinking about putting some wings on too.   How do you smoke yours?  Do you even do them at the 225 or so that you smoke a Boston But on? Any tips would be great.

    First Try at Pulled Pork

I'm going to try smoking a Boston Butt for some good Eastern Carolina Pulled Pork tomorrow.  This is by far my most ambition attempt thus far.  I'll be using a Weber 22.5 Kettle with the Smokenator 1000.  I am going to put a rub on tonight (although I have yet to figure out what rub to use). Do...

I smoked a beer can chicken yesterday, What a High!

Sorry bad pun. I had people coming over that got there before I was ready, so no pics.  I realized my first mistake, the chicken was too big for the lid to close securely on my Weber kettle.  That being said, everything else worked real well.  I combined two recipes from youtube.  The first was...

I'm smoking for the first time tomorrow. Baby Backs on a Weber Kettle.

I'm doing my first smoke ever tomorrow. I am going to do Baby Back ribs on my 22.5" Weber Kettle. I did a trial run for temp yesterday, it started hot but got it pretty stable at 250 after figuring out vents. I've got hickory chips soaking and rub on the ribs. I'm going to try a 2-2-1 with...

    Excited about slow and low

My name is Bob and I live in Chattanooga, TN. When my Weber Genesis got stolen and could not quite afford to replace it I went with the 22.5 inch Weber Kettle. This has been my first real try at charcoal. I have loved it, although I still am not quite io my gas skills yet. One possibility...
