    Pork Loin uneven ?

     Smoked a 3 .5 Pork Loin today   ( after not Smoking for a while )    Set up smoker ( leveled )  Check & calibrated Mav. duel prob thermometer ( new battery's as well )  both probes AND the temp reading on my MES 30 all with in 3 degrees...... ​OK after 2 hours 30 mins I got a reading of IT...

    Stall ????? THEN IT start to drop ????

     Haven't been here in a while , and haven't smoked in a while ....... I hit a stall on a 5 pound brisket ( just now )   IT was stalled at 183....for abut 2 hrs .....then   IT dropped its now 180 ???? Never saw that ? anyone have a idea ?      fast ?

    This week -end I tried STUBBS spicy BBQ sauce , and I usually don't like ANY store bought BBQ sauce's ....BUT I loved it !      I would like to know if anyone knows what is in it ? and if it can be home made . it was spicy , with a sweet tang and a nice little kick , really enjoyed it
