Well since I can't seem to get enough of this stuff, I did some loin chops and a few chickens today. Chops were marinated in a herb, garlic, butter mix for 24 hours. Chickens got a rub down of S&P on one and a mix of S&P, garlic powder, chili powder, opnion powder, and white sugar on the...
Did up some ribs and pork candy today along with another butt and a venison loin. I posted Qview of the loin in the "Game" section.
Used a standard pork rub on everything. 2-2-1 on the ribs. Left the pork candy on until it carmelized good. It's interesting how the rub takes on different...
Had some venison Loins given to me so I decided to smokem. Just rubbed with a very little amount of S&P, garlic and onion powder and a dash of chili powder. Used a combo of hickory and mesquite during this burn. Pulled and let rest at around 140. Very juicy and very tasty.
Built another patio model over the weekend for another buddy. Pretty much the same as the last one I did just a little bigger. This one has a cooking area of 18"x30" with a wrap around shelf. Here is the pic.
Well had so much fun doing a variety last weekend, I decided to do a brisket tomorrow. Getting up at 4:30 again to start the smoke. I'll have to take pics in the morning of the brisket all rubbed down. I mixed up a rub that is similar to what I use on my prime rib. Always get lots of...
Well, I got my smoker finished up last weekend and went to town on it today. Prepped everything yesterday and got up at 4:30Am to get the fire going. For the record this is my first go at doing any smoking. As mentioned in roll call I mainly cooked over wood with direct heat. I was happy...
My buddy and I built this little beauty over the last two days. Still needs finish welded and painted, but had to share some pics. The cooking chamber is 16x24. Check out the pics.
My grandparents bought a farm in the early 70's and on the property was a solid rock smokehouse with metal roof. It was built basically like most rock foundations from the early 1900's. I'm guessing it was built sometime after the original house in 1911. Long story short, the smokehouse was...
Ok so I'm almost finished with my RF build and have a tank that I had collected earlier. The tank I have is 14" in diameter and about 36" tall. My plan was to make it into a vertical cooker for beercan chicken. My plan is to build a small firebox and mount the tank to the top of it. I would...
I got started yesterday with my small RF build. My tank is 20"x48" and will bemounted on a stationary stand outside my shop so that we can work and Q at the same time. Here are some pics of the progress so far.
Tank up on its new stand.
Cutting out the firebox
Firebox bent up and...

Getting ready to start a RF build this coming weekend so I figured I would post an intro. Name is Mike and been Q'ng for a few years. Mainly direct heat cooking over open pit fires with some offset cooking mixed in. Been wanting to build a RF for quite some time and finally have a...
