Tonite I smoked 3 racks of BB for the second time ever and they came out dry. I have a bullet type charcoal smoker that I got at Lowes. I used RO charcoal and my temps stayed between 200 and 225 the entire smoke. I did the 2-2-1 method.
I tried a new rub....Lawry's Basil, Citrus...
Picked up 3 slabs of baby backs yesterday at BJ's. Rubbed them down with grill mates pork rub, Covered them and put them in the fridge overnight. Have hickory chips that have been soaking overnight. Wish me luck! :)

July 4th! About 3 hrs total! Started with temps right at 250. About 40 mins into the smoke the temp dropped to 200. Added more RO and the temp stayed at roughly 265 for the remainder of the smoke. I could not get the temp down. Final breast temp with a digital thermometer was 184. The breast...
Assembled and seasoned just as the directions called for. I applied a light coat of spray oil and filled up my starter chimney with Kingsford Briquettes. Once I dumped the hot coals in the smoker and attached the top portion of the smoker the temp slowly rose and came to a rest around 400...

I got a new (Master Forge) charcoal smoker for fathers day. Been interested in smoking for quite some time now. Found this site recently. Not sure where to start or what would be a good "trial and error first smoke". Any advice will be greatly appreciated.
