Honey in place of corn syrup for brats?

I make brats using a len poli recipe I believe and they're great! I use corn syrup which is what the recipe calls for but I was thinking about using honey instead. Would the honey work well? I'm also thinking about trying a small batch with sriracha in it! woohoo!

Cold smoked BBB with a bourbon cure

I haven't messed around with cooking at home with Bourbon but about everything I've had that has been cooked with bourbon has been awesome so I'm trying my hand at adding this awesome flavor to the awesomest of smokes, bacon. :) *BBB is buckboard bacon, meaning it's cut from a pork butt. If you...

    Canadian bacon :)

I threw a loin in with some cure, brown sugar, and a little spice a few days ago. I rinsed it off this morning, let it dry for a bit then let it finish drying in the 'house at about 120F. This is my first time tying any meat! I got busy with other things and left it at around 130 for too...

    Wifi smoker controllers

Has anyone used one of the temp controllers that use a wifi signal so you can control the settings from a PC or smartphone? Like bbqguru sells. The techy side of me thinks it would be really cool to be able to check temps and alter settings from my phone while I'm at work or wherever :) I'd...

    Braunschweiger

A big thanks to Couger78 for the previous post about Braunschweiger!! I made up 5lbs of Rytek's recipe. A little variation though, I didn't really want to use pig snouts... although I did see some in the store the other day when I bought the pork liver! I also didn't have soy conc. so I used...

I get all excited over the strangest things!

I was in the city today so I stopped at a global market store. I went in and they had pork belly and pork liver!!!!!!!!!!! I had to contain myself to keep from creating a scene lol! Prices were even decent! They even had weisswurst and liverwurst! I didn't buy that though, just the other. So...

Made up some more BBB (pics!)

The supply of buckboard bacon (BBB) was getting dangerously low in the freezer so here we go. I dry cured three slabs I saved back from recent sausage endeavors, about 7-8lb total. (This is not to be confused with dry curing like with sausage) All I did was weigh each piece, add appropriate...

Good deal on a univex slicer?

I have an opportunity to purchase a used univex slicer for $50. He says it needs a new blade, is missing the sharpening part, and can't get it to adjust the slice thickness. I have no idea if it's worth it given its issues or not. If someone could help me out I'd appreciate it. thanks!

    Last weekend's sausage and brats

Went to nearest butcher (40 min away) last weekend and bought four nice butts at $1.89/lb. Total 37lb.  Ground it all up, saved three pieces for BBB, mixed most of it up but saved some for later sausage use. I did a small batch of Legg's Tuscan fresh sausage. Just mixed it as bulk and froze...

    Legg's smoked sausage and bologna

Had some time today so that equals a trip to the store and getting out the grinder and stuffer. :) Today I decided on using a couple Legg's mixes, 6 lbs of each smoked sausage and bologna. I haven't tried these mixes before but I can't wait! I love bologna! Here are the mixes, measured out...

Two chickens and pulled pork :) Q-view of course!

Had some company over yesterday so I had a great excuse to get some TBS rollin'! I did two pork butts and two hens.  I can't say enough how much the Amazen pellet smoker has changed by smokes! It has made THE difference between good and GREAT! From the color to the flavor, it has been...

    Withdrawal!

I haven't smoked anything for too long! Probably a month! Aaaaaaah! I've been wanting to, just haven't had the opportunity, and I only have two packages of BBB in the freezer! I think I'll be able to this coming weekend though. Probably some pulled pork, some ribs, and a chicken. That should...

    Leggs seasoning has arrived!

Wooohooo! Bought a variety of Legg's seasoning from Columbia Spice the other day and it arrived today! Can't wait to try some new sausages! Now I just need to find some time...... The Tuscan sausage mix (in the clear bag) smells really good, even thru the bag! I even bought some pizza flavored...

    Turkey brats

Thought I'd test out some turkey brats this weekend. My mom can't eat red meat or pork so I thought I'd try to make her up a brat that she could eat.  I found a recipe here at SMF and altered it some. Here is a link to the original recipe. ...

Deer sausage with jalapenos and cheddar. Recipe and q-view!

The beginning of this year I made up another round of deer sausage. I haven’t posted this until now because it took me forever to resize the images since I used my normal camera on some of the pics instead of my iphone.  Sausage making is addictive! This time I took more pics and am including my...

    The little smokehouse (DONE)!

Why didn't I do this sooner?  First off, thanks to everyone who has posted their builds.  There just isn't enough room in my MES30 to adequately hang sausage, IMO. I don't smoke a lot though either so I decided to build a smokehouse that is quite a bit bigger than my MES but not overkill...

    36x30x48 gas or electric?

Hey guys (and gals). I'm going to build a smokehouse soon and was wanting your thoughts on whether I should go gas or electric for a 36x30x48. I would probably use a burner like pops used. (Thanks for the write up Pops!) if its not too big for this size.  If the gas would be too much I could...

Got a AMNPS yesterday, gonna try it out tomorrow!

Well, I finally got a AMNPS!!!  I'm super excited to give it a try and taste the awesomeness! Tomorrow (Saturday) should be a great day to try it out. I've got lots of sausage and possibly some dried venison in the near future but I want to try out something small first. Maybe some ribs? Pulled...
