This is a video of some test and tune out at the local motorsports park.
Smoked some yellow tail tuna a couple days ago, it came out perfect! I started with with some Alder but ran out of that and finished it up with some Apple wood.
I don't have any pics, just a video.
Grilled some Chicken on the Beast. I didn't have time to smoke the chicken.
but had it defrosted. So Decided to grill it in the Beast, and have a fire in the smoker side!
It did 2 things, cooked the chicken, and burned off some of the built up grease.

Just got done making some beef jerky.
It turned out better then any store bought!
I cured it over night with sea salt, steak sauce
garlic powder, black pepper and crushed red pepper.
And the next day, I smoked it for 11 hours on low temp maybe
160 to 190 with some cherry wood and a little...
Decided to start a thread about my Custom smoker.
I have named it the Beast!
It started out small and went from there.
Decided to add some propane to the smoker...
And had to either get rid of the Drum or use it, so the build begins!
The door is next. Got it cut out and installed...
Have some yellow fin tuna in the smoker for friend. Can't wait until its done! I'm using pecan for the smoke.
