    Fatty's Cook time and Temp

    Hey All, good morning.    Prepped 2 fatties last night for smoking today (QView will be up later).  My question is this, I know I'm looking for an internal of 165-170 for the pork sausage but at what time / temp combination.  2 hours @ 240, 3 hours @ 225, etc.  Want to eat at 5, so am thinking...

    Built by Guy on Craigslist for $400

    Found a guys in Jacksonville, Florida to build this for me.  I knew what I wanted, but he normally does charcoal grills out of 55 gallon drums, so this took some explaining. He really had no understanding of a side firebox, but made this one out of 1/4 plate steel. I can still fit a chimney...

    Need some advice and a location.

      Hello all.  this is my first post as I have been jealously "lurking" for a while now.  I finally got my home built unit, home (see pics in album), no I didn't build it, found a guy on craigslist to build it for me.  My question is this,  Does anybody know where to find a good sauce "mop"...
