    CURING - HANGING

New question, (I think). When a cow or pig is hung,I've heard for as long as 45 days, the meat gets tenderized by itself. What requirements are needed to keep the meat from 'spoiling'? What temps are needed and air quality? What is the difference between hanging beef (or pork), or just...

    GRINDER SPEED

I have a friend that is going to 'revamp' an older style, cast iron  hand crank grinder with a 3/4 HP motor. Now the motor turns at about 3400 rpms and he has on order a pulley that will fit the grinder shaft.  The problem that I see is that the grinder will be turning at about 850 rpms. To me...

    RE-SMOKING A SMOKED HAM (Q-VIEW ADDED)

A while ago someone posted about re-smoking a ham, with a twist.  He removed the skin and a lot of fat, which he than put on an upper rack to let the pork fat render down keeping the ham extra moist. Can someone post a link to that post?   I'm going to try to replicate his idea, and results...

    SMOKING WITH CEDAR

I have a friend that is wanting to smoke his meats with cedar.  You use cedar in 'chests and closets', not "smoking" or are we missing a new supply of wood??   It just sounds wrong to me, am I wrong, or just inexperienced? Just 'wood; like to know.           Larry
