    Need help with pork butt

Sorry, no pics but it was beautiful. There will be many more smokes, I promise to take some pics. I always start off wanting to take pics but get in the zone and forget.   I tried to add a pic of some chicken but it said I do not have permission.

    Need help with pork butt

Ok I am back. The meat cooked for 13 hours and I took it to 210 degreees. I foiled at 160. I let the butts rest in a cooler for about 1 1/2 hours. When I grabbed the packages to take them out of the cooler you could feel the butt coming apart in the foil. It was the most tender all the way...

    Need help with pork butt

It is looking like I am not getting hot enough. Yes I mean that the meat does not pull apart when you get close to the bone. I am off to set up the cooker. I will check back if I get a chance tonight.

    Need help with pork butt

Thanks for the ideas. I try to keep the temp between 225 and 250 in the cooker also. I checked my thermometer with my cooking probe and it is pretty close that way. I will try to boil it and check it that way also. I have to cook tonight so I wont be able to do that before I do it. I think I...

    Need help with pork butt

I am cooking some more pork butt this weekend and I would like to fix a problem I am having. The outside 1 to 1/12 inches are excellent. It has good flavor and texture. When you get further down to the bone the meat is flavorless and rubbery. I rub the meat usually and let is sit overnight. I...

    500 gallon tank build

I will try to post some pics later. The pipe he is talking about is capped on the end but has progressivley bigger holes from the fire end. This is how the one they have at work is but it is more of a hamburger cooker than a smoker. It looks like your stack goes almost to the bottom of the tank...

    500 gallon tank build

Hello, I am new here, been lurking for a while though. I am building a smoker from a 500 gallon propane tank and have a question. I am putting the firebox on one end of it and my dad thinks I should run a pipe thru the tank to distribute the heat. I say that it wont be indirect cooking that way...
