    MES 130B Temperature Sensor Issues

This smoker is making me tear my hair out. I'm currently mid-pastrami, and it doesn't know what it's doing. I wanted to run it at ~235because the last time I used it, 235 was more like 300 based on the readout of my external thermometer (I did test this in boiling water and it's all but...

    MES 130B Temperature Sensor Issues

Now that my little temper tantrum is over, and the weather warmed up a touch, I spent a little more time with my smoker. I set up a small space heater in front of it to warm up the box, hit the temperature probe with a lighter, plugged the unit it, and fired it up. No issues. It appears that...

    MES 130B Temperature Sensor Issues

I'm about over Masterbuilt. I contacted them via email through their site, got an automated reply saying they'll be in contact within 2 business days. 11 days later I finally get an email back stating that "I would recommend disconnecting the power circuit board to allow the component to...

    MES 130B Temperature Sensor Issues

It’s showing 32 on the display. My stand alone thermometers are showing 190+ after multiple resets. I’m going to check and make sure everything is properly connected then try the preheat idea.

    MES 130B Temperature Sensor Issues

I believe it was EAA1. It warmed up to 190 inside, though, according to my thermometers. What exactly do I need to warm up?

    MES 130B Temperature Sensor Issues

My wife bought me a 130B over the summer from a store that basically sells/auctions off Walmart and Amazon returned item pallets and stuff (yes, it's odd, and my wife is obsessed), but we were in between homes and didn't have the space to have it/use it until now. I was just trying to fire it...

Char-Griller Smokin Pro with firebox- Mods

Definitely too hot from the looks of it.

Char-Griller Smokin Pro with firebox- Mods

What were your temps? Sounds too high. Next time close the damper on the side fire box. You were feeding it too much air.

Char-Griller Smokin Pro with firebox- Mods

Seasoning won't have any effect on the paint. The paint bubbled because it got too hot. If you had your dampers fully closed, you have a bad air leak somewhere.

Sometimes modding and tweaking is half the fun.

    Side Burner Leak

You most likely have spider webs in the tube to the burner.  Turn the gas off and pull things apart and clean it up.

    Another first pastrami (with q-view)

Yeah, I used the pre-corned brisket. I picked up 1 round and one brisket just before St. Patty's day. I don't have the time to do my own yet, though eventually I probably will.

    Another first pastrami (with q-view)

I soaked my brisket for 2 days with a couple water changes a day to pull out some of the salt in the meat.

    Another first pastrami (with q-view)

Yeah, my wife's friend who is currently living with us works for a coffee supplier. I'll be acquiring a coffee grinder in the not too distant future. We have a Keurig coffee maker, so no need to grind my own coffee at this point in time.

The Minion Method Explained w/ Tutorial

I tweaked my minion method yesterday with my Char-Griller Duo. Typically, I'd stack the unlit on the food side of the fire box, and then dump the lit on the opposite end of the charcoal box. This lead to me having to fight to keep the temps DOWN. Yesterday, due to the suggestions of others on...

    Another first pastrami (with q-view)

Sorry for the delay. I ended up not feeling well last night, so the next installment of the post didn't work out so well. It turned out pretty well. The rub had too much salt for my taste, and I really need to get a spice grinder to get a finer grind on the pepper corns. All in all, I would...

    Another first pastrami (with q-view)

I too am attempting my first pastrami today. It's a cool, dreary, drizzly day, so why not do some smoking? I'm using this rub http://bbq.about.com/od/rubrecipes/r/bl20223b.htm Right now, I'm floating between 220 and 250 with an occasional shot of hickory chips. I'm also trying to resurrect a...
